In January 2016, what had started out a year and half earlier as "small talk, while sitting on the front porch" about the need for a slaughterhouse to return to the community and serve Panola County, turned in to big plans for the future as Panola County Processing opened its doors to the public. In doing so, Bill Kneipp and Jeff Davidson, the owners of Panola County Processing, established themselves as the newest full-service, state inspected slaughterhouse in East Texas. We have since become one of a very few designated small-plant USDA Federal inspected slaughterhouses, serving East Texas and the surrounding area. We believe that all of our customers deserve the highest level of service, and we are committed to providing just that.
